Ingredients

4 Tbsp Extra Virgin Olive Oil
1 medium onion, chopped
4 jalapeno peppers, minced (seeds removed if desired)
3 cups TE Roasted Eggplant and Red Pepper spread
1 cup marinara sauce
1/4 cup water
8 large eggs
1/2 cup grated Parmesan cheese
Salt and ground black pepper
Basil sprigs, for garnishing

Directions

Place a large cast iron skillet over medium-high heat, add oil.

Sautee onion and jalapenos until softened, about 7 minutes.

Add Taste Eleveated Roasted Eggplant Spread, marinara and water, bring to a boil.

Lower heat to medium and crack eggs one-by-one into the sauce, sprinkle with salt and pepper.

Cover and cook until the whites of eggs are set, as desired.

Remove from heat, then sprinkle with cheese and basil sprigs.
