PORK LOIN STUFFED WITH TE FIGS, SPINACH & GOAT CHEESE

Ingredients

1 1/2 lb. pork tenderloin
1 cup TE Fig Chutney
1/2 cup goat cheese, broken into small pieces
1/2 cup spinach leaves
1/4 cup TE Candied Oranges with Rosemary
Salt and ground black pepper

Preheat oven to 425°F.

Filet the tenderloin and lay out on a cutting board, using a meat tenderized; pound until 1/4-1/2 inch thick.

Season both sides with generous amount salt and pepper.

Spread TE Figs on entire surface of one side of the tenderloin.

Top the fig with a layer of spinach leaves and sprinkle the goat cheese on top.

Tightly roll the tenderloin and secure with kitchen twine.

Garnish top with TE Candied Oranges.

Place the pork in a casserole dish or foil-lined baking sheet.

Cook for 45-60 minutes, or until thermometer in the middle of the meat reads 150°F.

Remove from oven, let rest for 10 minutes and remove twine.

Cut into 1 1/2 -2 inch slices and garnish with additional figs or oranges, if desired.
