ROASTED DUCK WITH TE CANDIED ORANGES

Ingredients

4 duck breasts
1 jar TE Candied Oranges with Rosemary, divided
2 Tbsp canola oil (or other low saturated fat oil)
Salt and freshly ground black pepper

Directions

Sprinkle duck breasts with salt and freshly ground black pepper.

Transfer duck to a resealable bag or glassware and pour 1 jar of TE Candied Oranges, reserving

¼ cup for garnish.

Let marinade for at least 4 hours, covered or sealed, in the refrigerator.

Preheat oven to 350°F.

Remove duck from marinade and wash excess marinade from the meat, making sure to thoroughly

dry before cooking.

Bring oil to medium heat in large pan and sear duck breasts, skin side down, and remove excess

oil from pan as the fat renders.

The duck should not touch during this step so complete in two batches if your pan is not large enough.

Once the skin has become golden brown and rendered about 50 percent of the fat (about 5 to 7

minutes, depending on size of breast), flip and just 'kiss' the flesh side before transferring to the oven.

Roast in the oven for approximately 7 minutes to a perfect medium rare (135°F interior temperature).

Remove pan from oven then remove duck from the pan and let rest for 5 minutes.

Sprinkle duck with salt and freshly ground black pepper.

If desired, cut duck in 1/2-inch thick slices for presentation or serve all whole.

Spoon the reserved TE Candied Oranges over the prepared duck
