STUFFED MUSHROOMS WITH CRAB AND TE CARAMELIZED ONIONS

Ingredients

20 button mushrooms, cleaned, stems reserved
2 Tbsp olive oil
2 shallots, coarsly chopped
2 Tsp minced garlic
3 Tbsp tarragon leaves, chopped, divided
1 Tbsp basil, chopped, divided
2 Tbsp bread crumbs
4 Tbsp chicken stock or broth
1 lb. crab meat
1 jar TE Caramelized Onion Spread
1/2 cup parmesan cheese grated

Directions

Preheat oven to 375°F.

Chop mushroom stems and sauté in 2 Tbsp olive oil with shallots over medium heat for 5 minutes.

Add garlic, tarragon, basil, bread crumbs and TE Onions; sauté for 10 minutes.

Place mixture in a food processor with crab and chicken stock; blend until well-combined.

Fill each mushroom cap with mixture and place on a baking sheet.

Sprinkle with parmesan cheese and bake for 30 minutes.

Garnish with reserved tarragon and basil.
