STUFFED PORK MEDALLIONS WITH TE SWEET JALAPEÑOS

Pork Medallions with Jalapenos

Ingredients

For Brine:
½ cup Kosher salt
1 gallon water
For Medallions:
1 ½ lb pork loin
½ cup goat cheese
Crumbled (cream cheese may be substituted)
TE Sweet Jalapenos
1 lb bacon, strips cut in half
Optional Glaze:
TE Candied Oranges

Directions

Dissolve Kosher salt in water.

Pour over pork loin and allow to brine at least 4-8 hours, overnight is preferred.

Remove loin, pat dry and cut into ¾ inch wide medallions.

Butterfly each medallion and set aside.

Combine cheese and TE Sweet Jalapenos in a bowl.

Spoon a small amount into the center of each butterflied medallion and wrapping ½ of a strip of bacon around them, securing with toothpick.

Grill over medium heat until interior reaches the proper temperature.

Remove from grill and allow to rest.

*While grilling, the medallions can be basted with TE Candied Oranges for a delicious tangy glaze.*
