TUNA TARTARE WITH TE MUSTARD SEEDS

Ingredients

1 lb very fresh tuna steaks, cut into ¼ squares
1⁄4 cups olive oil
2 tsp grated fresh ginger
1 1/2 tbsp fresh lime juice
1 1⁄2 tsp wasabi powder
1 tbsp soy sauce
1 tbsp hot red pepper sauce
1 tbsp TE Sweet-n-Tangy Mustard Seeds or
Habapeño Mustard Seeds
3/4 tbsp kosher salt
1/2 tbsp fresh ground black pepper
1/4 cups minced scallions, white and green parts (12
scallions)
1 tabsp minced fresh serrano peppers, seeds removed
2 ripe avocadoes
4 tbsp of TE Mustard Seeds for garnish

For crisps:

Preheat oven to 350°F. Spray mini-muffin tin pan with non-stick cooking spray.

Brush each wonton with olive oil and sprinkle with sesame seeds and press into muffin molds.

Bake until golden brown, about 9 minutes. Cool on sheet.

Can be made 8 hours ahead. Let stand at room temperature.

For Tartare

Cut the tuna into 1/4-inch dice and place it in a bowl.

In a separate bowl, combine the olive oil, lime juice, wasabi, soy sauce, hot red pepper sauce,

mustard seeds, salt, and pepper.

Pour over the tuna, add the scallions and serrano, mix well.

Cut the avocados into 1/4-inch dice.

Carefully mix the avocado into the tuna mixture.

Allow the mixture to sit in the refrigerator for at least 1 hour.

Fill each wonton cup with tartare and garnish with TE Mustard Seeds.
